JoAnn made this delicious vegan sandwich the other day and it was too good not to share! Here’s the recipe if you want to give it a try at home:
Vegan “Chicken” Sandwich:
Ingredients:
Udi’s Gluten-Free Bread
1 Quorn Chicken Style Vegan Pattie (cooked)
Organic Sauerkraut
Organic Spinach
Organic Kale
Organic Beets
Vinegar (to taste)
Olive Oil (optional, to taste)
Daiya Shredded Cheese (just a pinch)
Directions:
1) Cook the Quorn according to package instructions
2) While Quorn is cooking, “massage” spinach, kale, beets, vinegar and optional olive oil together in a large bowl with your (clean & washed!) fingers until well mixed.
3) Place Quorn on Udi’s bun and top with salad, sauerkraut, and just a pinch of Daiya cheese.
4) Cut into fourths and serve immediately.
